Smashed Avocado on Sourdough



This is such an easy breakfast option for 1 person. Avocado provides healthy fats and fibre as well as antioxidant and anti-inflammatory benefits that can help reduce heart disease risk. Feta is a good source of protein and bone-friendly calcium. 


Mash half an avocado with some lemon juice.


Toast 1 or 2 slices of sourdough. No need to butter but could drizzle with some extra virgin olive oil before topping with the avocado.


Sprinkle with some feta cheese and freshly ground black pepper. Even better, top with some some fresh bean, broccoli or alfalfa spouts (they are easy to grow at home).
