Smashed Avocado on Sourdough

This is such an easy breakfast option for 1 person. Avocado provides healthy fats and fibre as well as antioxidant and anti-inflammatory benefits that can help reduce heart disease risk. Feta is a good source of protein and bone-friendly calcium. 


Mash half an avocado with some lemon juice.


Toast 1 or 2 slices of sourdough. No need to butter but could drizzle with some extra virgin olive oil before topping with the avocado.


Sprinkle with some feta cheese or boiled/poached egg and freshly ground black pepper. Add more toppings if you like such as fresh tomato, rocket, alfalfa spouts (they are easy to grow at home).
