Make the night before for a tasty, satisfying, speedy breakfast in the morning. Oats, nuts and seeds are an excellent source of fibre and protein for aiding digestion and providing essential minerals like calcium, magnesium, iron and essential fatty acid omega-3. This can also be made in a mason jar for a breakfast on-the-go.
60g rolled oats (gluten-free oats are also available)
1 tbsp chia seeds
1 tbsp whole flaxseeds
1/2 tsp ground cinnamon (or to taste)
2 tbsp full fat Greek yogurt or coconut yogurt
2 tbsp natural nut butter (eg almond, cashew)
180ml sweetened plant based milk (eg almond, oat, soya)
1 cup fresh blueberries or frozen summer fruits or 1/2 cup of dried berries (dried blueberries, raspberries cranberries)
Steps:
Combine oats, chia and flax seeds, cinnamon, yogurt, nut butter and plant milk. Stir until fully combined.
If using frozen berries, add half a cup to the mixture and combine again.
Cover the container and leave overnight in the fridge.
In the morning, stir in extra plant milk if the oats are too thick and top with the fresh berries.
Other toppings include cacao nibs, coconut chips, sunflower and pumpkin seeds, goji berries, stewed apple/plums. Option: delete nut butter and top with chopped mixed nuts instead.
