Hummus makes a wonderful, filling snack served with oat cakes, carrot, cucumber or celery sticks. The chickpeas are full of fibre and protein, the garlic is antimicrobial and the extra virgin olive oil contains oleic acid which helps reduce inflammation in the body and contributes to a healthy heart.
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tbsp lemon juice
2 garlic cloves, minced
2 tbsp extra virgin olive oil
1/2 teaspoon ground cumin
Salt to taste
Water (as needed for consistency)
Paprika and fresh parsley for garnish (optional)
Instructions:
In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, cumin, and a pinch of salt.
Blend until smooth, scraping down the sides of the bowl as needed. If the hummus is too thick, add water, 1 tablespoon at a time, until desired consistency is reached.
Taste and adjust seasoning if needed, adding more salt or lemon juice as desired.
Transfer the hummus to a serving bowl. Drizzle with a little extra olive oil and sprinkle with paprika and fresh parsley for garnish if desired.
